Despite our very messy house because of the renovation (seriously, we are living in the bedroom, but no complaints here!), I’m trying to cook as much as I can, because eating out everyday can be expensive, and also confusing, like where are we gonna eat today?! And as much as I complain from time to time for cooking every single day, I really miss my food! hahaha Now, I’m craving my rice and beans, the most traditional brazilian food ever! I’m a big rice addict, and it’s been a week that I haven’t made it, we’ve been eating a lot of different style pasta lately. During the weekend, I managed to squeeze a little dessert, because I already had the pastry in the freezer, which I did a few weeks ago, and I don’t want them to go bad, I’ll probably use the last one this weekend. Rafael saw me browsing for desserts a while ago, and asked me to do this whole lemon tart. I’m a big fan o lemon sweets, a love key lime pie, and also a lemon merengue pie that my cousin does in Brazil. If you know me, you already know that I’m not that crazy for sweet stuff, and with lemon you can get that perfect bittersweet balance, that I love!
This is the second time that I used this pastry, for me it’s a little bit of a challenge, because it gets so soft, so fast….the tart shell didn’t come out perfect, but I will get there! (I hope). It was the first time that I used ground blanched almonds, and you know what, it really gives the tart an extra delicious taste!
Since the dough was in the freezer, I left if overnight in the fridge and used it the next day in the afternoon, and it was perfect. I had to partially bake the tart shell before pouring the filling (left picture).
I seriously need to learn how to take better pictures (I know!), I took these with my phone, which is an Iphone 4, so the camera is not so good, but also don’t like the pictures that I take with the camera, so I don’t know what I’ll do…hahaha maybe I’ll have some inspiration when I have my dream kitchen, but man that will take time!
I think that I poured just the right amount of filling, it didn’t spill in the oven 😀
Et voilà!!! For me it came out perfect! I let it cool down for maybe two hours, but when we ate it, it was slightly warm, for me it was kinda weird. So I kept it in the fridge, and next day, it was amazing! To tell you the truth, the first bite for me always has a slight egg taste, but then the lemon takes over…hahaha
Rafael loved it too, so I guess that I will be making this a lot!
