Upside down Pineapple Cake

TGIF!! This week was a slow one, does anybody else think that?! Managed to wake up early monday and tuesday, but from wednesday on it was so hard getting out of bed…ugh! It was so warm under the covers, and it was grey and rainy outside…sleeping should not feel so good! hahahaha other than that, I did a lot of cooking and baking this week, spent almost the whole morning and afternoons in the kitchen. My life seriously revolves around eating, and I’m very happy about that!! haha I love to browse the web, book and magazines for new recipes, and this week I found one really good! I follow a lot of people on IG, I guess most of them have blogs, but I always forget to check it out when I’m on the computer. I’ve been following Yossy Arefi’s IG for some time now, and I’m always amazed by her food pics, they are so beautiful and mouth watering…these days she posted a photo of a pineapple cake that gave me serious cravings, I love pineapple!!! Until that post, I think I had never noticed that she has a blog, Apt. 2B Baking Co. so I finally entered her blog to see the recipe, and apparently it was easy…I little bit odd for me, because I never put crème fraîche in a cake before, but hey there’s a first time for everything, right?! So I went to the supermarket last friday, to bake the cake during the weekend, but in the end I wasn’t feeling so good due to cramps (that time of month…). I ended up doing the cake on tuesday, by then, my pineapple was very ripe, I almost lost it, but I managed to save it to do the cake…yay!!!

There where a lot parts while I was doing the cake that seemed very odd to me, it was the first time that I used a skillet for a cake, and was a bit worried about that. I don’t now why, but when I read a recipe, I like it to be very well explained, time wise sense, and maybe pictures to help you out. She said to cook the pineapple in the skillet for a few minutes, until they became soft….but how much time is “a few minutes”? I ended up cooking them for 10 minutes, and I think they came out just fine. Also, after mixing the batter, she says to pour it on top of fruit…pour to me is when something has a liquid consistency (or am I being to crazy?! hahaha). My batter was definitely not liquid, I had to put it on top of the fruit with a spatula, and it was a little bit tricky to spread it into an even layer. I was really skeptic about this cake you guys, I was sure I was doing something wrong…hahahaha

When I took it out of the oven, it looked really good, but I still had to invert the cake onto a plate…my oven proof carbon skillet is heavy (which one isn’t?!), and I wasn’t sure that I could invert the cake onto a plate without any disasters…haha I always tell Rafael to help me in these kind of situations (heavy duty), but he was working late, and was not home. So I had to do it myself….I dropped the plate on the floor trying to do it…hahaha but luckily it didn’t break…yeah!! So I managed to hold the plate over the skillet in another way and managed to invert the cake….truth be told, it came out crooked in plate…hahaha I tried to place it into the center, but I had no luck, I thought that it would break. The cake did stick a little bit on the skillet (that happened to her cake as well, so I guess it’s ok..haha), and it looked weird, I was sure that I screwed it up. When Rafael came home, he saw the cake and said: “this looks ugly”….hahahaha but of course we ended up eating it after dinner.

And let me tell you, it’s one of the best cakes I have done until now….SERIOUSLY!!! It’s not to sweet (just the way I like it!), and has a wonderful taste of rum, caramel and vanilla to it…and of course PINEAPPLE!!! Thinking about it now, it came out not so different from her’s, a little more darker, true…but I think it’s because of the brown sugar, the one that I find around here may not be as light as I think…so that’s why it was darker (also, the lighting in my apartment is not so good, maybe I could add that to the list…haha).

This may not be the most beautiful baked good that I’ve posted here until now, but I assure you that it is one of most delicious!! 😀
